This blog chronicles the cooking adventures of preparing and eating a low iodine diet in preparation for radioactive iodine (RAI) therapy for treatment of follicular variant papillary thyroid cancer.

-Steel cut oats with brown sugar, cinnamon and handful of frozen blueberries- first time making the steel cut oatmeal- used the overnight method- so just had to re-heat needed portion this morning! Worked great- no morning measuring or delays! Click herefor the recipe. Now have enough leftover for the next two mornings :) Used NO salt and no milk.
